Can you believe that tomorrow is Easter? If you're like me an scrambling to get things done at the last minute, fear not, because there are a ton of last minute Easter recipes and ideas to make your holiday egg-stra great!
I whipped up this cute Bunny Fruit Parfait this afternoon using ingredients I already had on hand. Here's the recipe using International Delight Vanilla Caramel Creme ... it's super yummy, and slightly sweet, made with Greek yogurt, fresh berries, and fun accents made of chocolate chips and marshmallows.
Vanilla Caramel Creme & Fruit Bunny Parfait Recipe
Ingredients
- 1 cup Greek yogurt
- 2 tablespoons International Delight Vanilla Caramel Creme
- 1 cup fresh berries - I used strawberries & blueberries
- 2 chocolate chips (for bunny eyes)
- 1 marshmallow (cut in half for bunny ears)
- 1 raspberry or watermelon triangle (for bunny nose)
Directions
- Combine Greek yogurt and International Delight creamer
- In desired serving dish (I used mini Mason jars), begin layering fruit and alternate with flavored Greek yogurt, making sure the final layer is Greek yogurt.
- Decorate top of parfait with chocolate chips, raspberry and marshmallows to resemble the face of a bunny. Chill or serve immediately.
As you can see, this is not a complicated recipe— but it's fun enough for kids to enjoy as an alternative to candy and other sweets. I plan on serving this tomorrow with our Easter brunch.
