This Southwest Quinoa Salad is simple and delicious! It's an easy quinoa salad recipe made with black beans, bell peppers, corn and other flavorful ingredients that make this salad or side dish light and healthy.

Ingredients

  • 3 cups cooked quinoa
  • 1 cup diced cucumber
  • 1 red bell pepper diced
  • 1 can corn drained
  • 1 can black beans drained and rinsed well
  • ¼ cup fresh cilantro chopped
  • ¼ cup olive oil
  • 3 tablespoons fresh lime juice can substitute lemon juice
  • ½ teaspoon salt can add more to taste
  • 1 teaspoon cumin
  • ½ teaspoon cayenne pepper

Instructions

  1. Simply combine all ingredients in a large bowl and mix well to incorporate.
