Authentic Tom Yum Soup Recipe

Ingredients

  • ½ cup medium-sized shrimp peeled and deveined
  • 1 mushroom quartered
  • 1 stalk lemongrass cut into pieces
  • 3 Kaffir lime leaves torn in half
  • 10 slices Galangal or ginger
  • ½ tablespoon fish sauce
  • ¼ tablespoon lime juice
  • 1 cup chicken stock or water
  • ½ tomato quartered
  • 1 tablespoon fresh cilantro chopped
  • 1 tablespoon green onions chopped
  • ½ tablespoon Thai chili paste
  • 2 tablespoons coconut milk
  • 2-3 red Thai chili sliced (if you like it hot!)

Instructions

  1. Put lemongrass, ginger, lime leaves, mushrooms, chilies and tomato into the water and bring to a boil. Cook until tender.
  2. Add shrimp and cook until pink.
  3. Add coconut milk, lime juice, fish sauce and Thai chilies paste.
  4. Serve hot and garnish with fresh cilantro and green onions.
