Preheat oven to 400 degrees.

With a sharp knife, cut a slit into each chicken breast to form a pocket.

Stuff each chicken breast with string cheese, sliced tomato and basil leaves. Sprinkle with salt and pepper to taste. Secure with toothpicks.

Place in a baking dish and drizzle with olive oil. Sprinkle with additional salt and pepper if desired.

Bake in preheated oven for 35-40 minutes, until chicken is fully cooked (this will depend on thickness of chicken breasts).

Brush with balsamic vinegar before serving.
