Pumpkin Spice Fried Apple Rings

Ingredients

  • 3-4 large Gala apples
  • oil for frying

For the batter:

  • 1 cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2 tbsp. sugar
  • 1 cup buttermilk
  • 1 large egg

Cinnamon sugar topping:

  • ½ cup sugar
  • ½ teaspoon cinnamon

Instructions

  1. In a medium-sized bowl, combine flour, baking powder, nutmeg, pumpkin pie spice, cinnamon, sugar and salt.

  2. In a separate bowl, whisk egg and buttermilk.

  3. Add the egg mixture into the flour mixture and stir until combined.
  4. Slice the apples into ¼-inch-thick rounds.

  5. Cut each apple slice into rings, using a circle cookie cutter.
  6. Using a smaller cookie cutter, cut out the center core of each apple slice. Discard center.

  7. Add 3-4 inches of canola oil to a large heavy-bottomed pan set over medium heat.
  8. Line a baking rack or tray with paper towels.
  9. Once the oil is "popping" begin by dipping each apple slice in the batter, shaking off any excess then place it into the oil. Flip over the apple slices occasionally so that they brown on all sides evenly with tongs.

  10. Place the apple rings on the paper towel-lined tray.

  11. Sprinkle fried apple rings with cinnamon-sugar topping.
