Vegan Double Chocolate Black Bean Brownies

Ingredients

  • 1 15 oz. can black beans rinsed well
  • ½ cup quick oats
  • cup agave can substitute maple syrup
  • ¼ cup vegetable oil or coconut oil
  • ½ cup vegan chocolate chips
  • 2 tablespoons cocoa powder
  • 2 teaspoons vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Additional chocolate chips to place on top

Instructions

  1. Preheat oven to 350 degrees F. Grease an 8x8” pan and set aside.
  2. Add all ingredients (except for chocolate chips) in KitchenAid Artisan Mini and mix until combined. Add ½ cup chocolate chips and mix to incorporate.
  3. Pour ingredients into the prepared pan. Place additional chocolate chips on top, and bake in the preheated oven for 15-18 minutes. Allow the brownies to cool for a minimum of 10 minutes before cutting.
