Caprese Stuffed Chicken

  • 2 Chicken breasts
  • 2 String Cheese
  • 4 Basil leaves
  • 2 Small Roma tomatoes sliced
  • Salt
  • Pepper
  • Olive oil
  • Balsamic vinegar


  1. Preheat oven to 400 degrees.
  2. With a sharp knife, cut a slit into each chicken breast to form a pocket.
  3. Stuff each chicken breast with string cheese, sliced tomato and basil leaves. Sprinkle with salt and pepper to taste. Secure with toothpicks.
  4. Place in a baking dish and drizzle with olive oil. Sprinkle with additional salt and pepper if desired.
  5. Bake in preheated oven for 35-40 minutes, until chicken is fully cooked (this will depend on thickness of chicken breasts).
  6. Brush with balsamic vinegar before serving.
