3cupscooked quinoa
1cupdiced cucumber
1red bell pepperdiced
1can corndrained
1can black beansdrained and rinsed well
¼cupfresh cilantrochopped
¼cupolive oil
3tablespoonsfresh lime juicecan substitute lemon juice
½teaspoonsaltcan add more to taste
1teaspooncumin
½teaspooncayenne pepper
