Healthy and fresh. That's the type of food I'm craving these days. For years one of my favorite lunches has been tuna salad with crackers. As a whole, it's not one of the worst things you can eat; but with mayo and extra crackers (I usually end up eating half the box), I knew it could be made better. That's when it occurred to me that I could use avocado instead of mayonnaise and then stuff the tuna salad inside a fresh tomato to avoid those extra carbs. While avocado is high in fat, it's a good fat from a whole food ... with a lot more flavor!
My journey to make a better tuna salad started at Walmart, where I purchased Ocean Naturals Skipjack Chunk Light Tuna and some other fresh ingredients.

Back at home I started to assemble my ingredients for the salad. Since my avocado wasn't as ripe as I wanted, I decided to add a little Greek yogurt for some extra creaminess. The combo totally worked and in less than 10 minutes I had prepared a fresh, healthy — and if I might add — AMAZING lunch. The Ocean Naturals tuna was FAR BETTER than any other canned tuna that I've tried. I usually opp for Albacore, but the Skipjack was just as tasty (and I like that it was in water rather than oil).

Creamy Avocado Tuna Salad Recipe
Ingredients
- 1 can Ocean Naturals Skipjack Light Tuna; drained
- 1 small avocado; mashed
- 1 large tomato; hollowed
- 1-2 Tablespoons plain Greek yogurt
- 1 rib celery; chopped finely
- salt, pepper, garlic power; to taste
Directions
- In medium-sized bowl, mix 1 can Ocean Naturals Tuna, mashed avocado, 1 Tablespoon plain Greek yogurt and chopped celery. Mix together until creamy— if desired add additional tablespoon of Greek yogurt. Once you've reached desired consistency, add salt, pepper and garlic powder to taste. And yes, it's supposed to look green!
- To hollow the tomato, cut off top with stem, and run a pairing knife around the inside edges. Remove juicy pulp and seeds with a spoon until tomato resembles a cup. Lightly salt interior and and heaping spoonfuls of prepared avocado tuna salad... refrigerate or enjoy!
