Holiday Breakfast Bake Recipe

The holidays are all about creating traditions with family and friends. Over the years it has become a tradition to host Christmas brunch at my home. My mom, dad, sister and her family come over to exchange presents and have a light meal before we all disperse to visit other relatives.

I usually prepare a small ham, croissants and some type of egg dish for everyone to enjoy with mimosas. I try to make the meal as easy as possible because it's Christmas, after all. I really don't think my family cares that much, as long as I keep the mimosa's flowing ...or at least that's what I tell myself. This year I decided to make my Christmas brunch preparation a whole lot easier with a little help from Betty Crocker™.

In addition to my usual spread, I'm going to whip up a couple of boxes of Betty Crocker™ Potatoes the night before and then bake them on Christmas morning with scrambled eggs and turkey bacon. I'm calling it a Holiday Breakfast Bake, and I can already tell you it will be delicious because I made a test batch up this morning!

Holiday Breakfast Bake

Ingredients (serves 4)

  • 1 box Betty Crocker™ casserole potatoes (your choice of flavor! I went with Julienne)
  • ½ cup milk or cream
  • 2 tablespoons butter
  • 2 eggs, scrambled
  • 3 slices bacon or sausage, cooked and crumbled

Directions

  1. Prepare Betty Crocker™ casserole potatoes according to box instructions.
  2. Store covered casserole overnight in the refrigerator.
  3. Add prepared scrambled eggs and bacon.
  4. Bake casserole for 15 minutes at 375 degrees. Stir and serve.

    There's more than one holiday dish I really like. One of the best has got to be green bean casserole. Two dessert dishes I really like are rose marina salad and cheesecake.
