Layered Kefir Ice Pops {Recipe}

I’m going to let you in on one of my biggest secrets for staying healthy: Probiotics. I started taking supplements and eating foods with natural probiotics after I learned that they could help boost your immune system. I can’t make any claims on what they could do for you, but I have noticed a difference in how I feel. With the benefits that I have seen, it was only natural that I pass my love of probiotics on to my family. My husband was an easy sell, but my daughter wasn’t as eager to get on the bandwagon. So what’s a mom to do? Use products with probiotics and sneak them into treats she loves!

One of my favorite ways to get some extra probiotics in our diets this summer is with Lifeway Kefir— a smooth, tart, refreshing cousin of yogurt, often thought of as the “Champagne of Dairy.”

Originating in Eastern Europe over 2000 years ago, kefir’s probiotic cultures have long been enhancing feelings of well-being. Lifeway Kefir contains 12 live and active Probiotic cultures that support the immune system and balance digestive health.

I enjoy drinking Lifeway Kefir on its own, but the best way to get my daughter to indulge is through some yummy layered ice pops that I make with real fruit and two different flavors of Lifeway Kefir.

I purchase varieties of Lifeway Kefir 32oz Low Fat Cultured Milk Smoothies at my local Winn-Dixie, where it’s located in the dairy aisle between the milk and yogurt. My Winn-Dixie carries Lifeway Kefir in Strawberry, Raspberry, Blueberry, Strawberry-Banana, and Plain, though other flavors may be available at other locations. To make my layered Kefir ice pops, you only need a few ingredients. Here’s the full recipe:

Layered Kefir Ice Pops Recipe

What’s needed:

  • 2 different flavors of Lifeway Kefir – I used Raspberry and Blueberry
  • a handful of fresh fruit, chopped – I used raspberries
  • Ice pop mold

Directions:

  1. Place a few pieces of chopped fruit into the bottom of ice pop mold.
  2. Pour 1st flavor of Lifeway Kefir in mold until 1/3 full.
  3. Set in freezer for 10-15 minutes, until a thin layer of ice has formed.
  4. Add 2nd flavor of Lifeway Kefir until 2/3 full.
  5. Repeat step 1, adding fruit pieces and remaining Lifeway Kefir, adding ice pop stick to mold.
  6. Freeze for 2 hours, or until ready to serve.

You can’t really tell from the photo that the pops are layered because both flavors of Lifeway Kefir are light in color, but once you start to eat the ice pop you can definitely tell the difference in flavor. My daughter actually loves to eat one of these layered Kefir ice pops for breakfast, which is great because she’s starting out the day with a healthy dose of probiotics!
