
Memorial Day is right around the corner — and with that comes the official start of summer! This holiday weekend is a great time to get out of the house, and fire up the grill for a family barbecue. Sam’s Club recently challenged me to create a whole meal on a grill using all of the main ingredients from Sam’s Club. As you know, I’m a huge fan of the store, so I already knew it was going to be easy to find everything I needed.
Here’s a look at my haul for my “Whole Meal on a Grill”:
Fresh Chicken Breasts, fresh raspberries, fresh whole mushrooms, a case of Champagne mangoes, fresh sweet corn, olive oil and a large bottle of Sutter Home Moscato — we needed something to wash down all this yummy food! Total cost — around $50.
So let’s break down the meal:
Marinated Mushrooms & Grilled Mango
Marinated Mushrooms – I took a pound of fresh, whole mushrooms and marinated them in a half bottle of Newman’s Own Organic Tuscan Italian Dressing. You can use any brand of dressing you wish. I let the marinade sit for about a half-hour before skewering and grilling.
Grilled Mango – Champagne mangoes are one of my favorite fruits, and they’re excellent for grilling. Simply cut the mango on each side (around the seed) and score the flesh. Grill with the skin side down. I eat the insides with a spoon, but you could also scoop to serve. A drizzle of honey would make this a fabulous dessert!
BBQ Grilled Chicken
BBQ Grilled Chicken – There’s nothing fancy going on here. I brushed fresh chicken breasts with olive oil (to keep from sticking to the grill) and then seasoned with salt and pepper. Once cooked thoroughly, I basted the chicken with our favorite BBQ sauce, Stubb’s.
Grilled Corn with Chipolte Mayo and Cotija Cheese
The pièce de résistance of this meal was the Grilled Corn with Chipotle Mayo and Cotija Cheese. If you make any part of this menu, this is side you want to make — it may change your life!
I started by boiling fresh corn for about 20 minutes — you want it cooked just enough, not mushy. Then, I brushed each piece lightly with olive oil and grilled until there were grill marks. I had pre-prepared the Chipotle Mayo using this recipe from Bobby Flay:
Chipotle Mayonnaise
1 cup mayonnaise
2 chipotles in adobo sauce
1 tablespoon adobo sauce
1/2 lime, juice
Salt and freshly ground black pepperAdd all the ingredients to a food processor and puree. Season, to taste, with salt and pepper.
Once corn is grilled to desired doneness, brush liberally with Chipotle Mayo and top with Cojito Cheese — I think Queso Fresco or Goat Cheese would work t00.
Prepare to be blown away with the flavor!
All this food served 6 adult with leftovers. It was a delicious meal … made entirely on a grill with the main ingredients from Sam’s Club!
