Adventures in Healthy Eating: Tofu Shirataki

During the Your Shape Challenge, Collective Bias was nice enough to send me the Hungry Girl Cookbook. This is where I first heard about Tofu Shirataki. I mean, if you can dedicate a whole chapter in your healthy food book around 1 product, then it must be good, right?

So what exactly is Tofu Shirataki?

It's a noodle made out of tofu and yam flour. There are only 40 calories for the whole bag, 1 gram of fat and 3g carbs or sugar!!

I should start this post by saying I am not a tofu eater. I recently started a new diet plan, the Fat Smash Diet, where I am not allowed to eat meat for the first 9 days.

The noodles intrigued me and they were easy to find- both Publix and Super Target carry them for around $2.29 a bag.

For my first tofu noodle concoction I chose to make a stir-fry. I purchased the Tofu Shirataki (spaghetti size), a head of broccoli, whole mushrooms, low sodium soy sauce and a navel orange.

The prep on the Tofu Shirataki is critical. YOU MUST RINSE THE NOODLES THROUGHLY AND THEN MICROWAVE FOR 1 MINUTE, if not, they smell like rotten fish. Once you rinse, microwave and dry the noodles they smell fine.

You then use the noodle like any other cooked noodle. In a few minutes I had this-

And it was delicious. The noodles look just like ramen without the fat. The texture is definitely different than ramen or spaghetti- more chewy. Like other tofu products, the flavor of the noodle is pretty tasteless and picks up the flavor of the dish. I was VERY skeptical of these noodles, but I will be buying again. I fed this meal to my daughter and didn't tell her the noodles were tofu, she had no clue and ate them all.

    Oh we are totally going to have to try this... I know I will like it... but L hates cooked broccoli but has to have her raw broccoli everyday. Imagine that haha!

    I am excited to try these, too. I am so glad you mentioned them because I didn't even know they existed. Where would I find them at Publix? Are they refrigerated?

    Leigh- They are with the tofu in refrigerated section near organics 🙂
