I needed a quick and easy after school snack for the kiddo after a rough day. So I whipped-up some fast Cherry Coke Cupcakes to put a cherry on top of our day!
And it's not like I needed something super fancy or anything over the top, but the truth is, I really needed something that would put a smile on the kid's face. School was rough, the weather was rough, and we were just in a funk.
Turning that around was so much easier with pink icing, a cherry topping a little sweetness and a hidden cherry inside.
Because sometimes, a little touch like that is all you need.

Cherry Coke Cupcakes
What makes this easy cake box mix hack so fun? The fact that you're replacing the water, butter and eggs in a traditional cake box mix with a can of yummy cherry coke. I mean, if you're in need of a fast and easy cupcake, what's more easy than just grabbing a can of soda and mixing it with your box?! Absolutely nothing.
Is there any other variation of Coke cupcakes that I would recommend? Heck yeah! You do not have to stop at Cherry Coke. Try Mountain Dew, Dr. Pepper or Root Beer. You're going to get a slightly different flavor with each one that you'll definitely love.
What You Need to Make Cherry Coke Cupcakes
- Cupcakes
- 1 box Devils Food Cake Mix + box ingredients
- 1 cup Coke
- ⅓ cup Maraschino Cherry liquid
- 24 Maraschino Cherries
- Frosting:
- 1 ¼ cup softened Butter
- 5 cup Powdered Sugar
- 2 tablespoon Coke
- 1 tablespoon Maraschino Cherry liquid
- Red Food Coloring
- 24 Maraschino Cherries
How to Make Cherry Coke Cupcakes
- Preheat oven to 350.
- Line muffin pan with paper liners.
- Make batter according to box direction EXCEPT substitute 1 cup Coke and ⅓ cup cherry liquid for water.
- Fill liners ⅔ full and add 1 cherry to the middle of each.
- Bake according to box directions and allow to cool completely.
- Whip butter, coke and cherry liquid and gradually add powdered sugar.
- You can optionally add red food coloring to get desired color.
- Transfer frosting to piping bag and frost each cupcake.
- Top each with another cherry.
