What do you do with your Thanksgiving leftovers?
Thanksgiving went as quickly as it came, and now I am left with a mountain of dishes and an abundance of leftovers. I have so much food left that if I knew how to store it properly it could count as emergency food storage! Luckily, I don't need Prepare Wise and my food storage needs are basic.
To combat this years feast, I purchased a ton of Ziploc bags and containers to keep things fresh as long as possible. This year, I plan on freezing many of the leftovers as I can't stand the thought of cooking with turkey every day for the next week.
I think I am going to make turkey & dumplings and turkey pot pie with the remaining turkey and freeze it for dinners over the next month. This way nothing will go to waste and I don't have to eat turkey for every meal until it is gone! I'm not sure what I'm going to do with the leftover mashed potatoes and green bean casserole. I suppose I could freeze them as well and serve as side dishes on nights that I make a home cooked meal.
The one thing that definitely will not go to waste this year is the pumpkin pie cheesecake from the Cheese Cake Factory. I discovered this little gem at Sam's Club this year and we are already down to the last piece-- which is sitting lonely in the fridge this very moment! As much as I love baking homemade desserts, I don't think anything I could make could come close to this dessert.
By the time I decide what to do with my Thanksgiving leftovers, I will have a Christmas menu to plan, and another whole kitchen of food to decide what to do with!
