Homemade Mint Chocolate Chip Fudge
Color me crazy for not realizing how easy it was to make homemade fudge! I'm a sweets girl, so naturally, fudge is one of my favorite treats. I don't eat it very often because in my area it's usually only sold seasonally— with the exception of theme parks, which I don't get to as often as I'd like.

This simple Mint Chocolate Chip Fudge recipe is perfect for St. Patrick's Day, Christmas, or anytime you're craving a chocolate minty treat! Great for gift giving, too!
Mint Chocolate Chip Fudge Recipe
Ingredients:
- 18 oz White Chocolate Chips
- 1 tablespoon Shortening
- 14 oz Sweetened Condensed Milk
- 1 teaspoon Mint Extract
- 1 cup Mini Chocolate Chips
- Green food coloring
How to Make Homemade Mint Chocolate Fudge:
1. Line 8x8 pan with foil and spray with non-stick spray.
2. Melt white chips and shortening by microwaving for 45 seconds, stirring and repeating until melted and smooth.
3. Add sweetened condensed milk and mint to melted chocolate and stir to incorporate.
4. Add food coloring to reach the desired color.
5. Allow mixture to cool a little before adding mini chips or they will melt.
6. Fold in mini chips, reserving about ¼ to place on top.
7. Transfer to prepared pan and press into place.
8. Sprinkle top with reserved chips and refrigerate for at least 1 hour before cutting.
