Is there anything better than mac and cheese? I'm not talking about macaroni and powdered cheese from a box— I'm talking about homemade, cheesy and decadent, mac and cheese. The kind that makes you feel cozy and warm; like you're wrapped in a wool blanket.
The awesome thing about Mac & Cheese is that is can be made in a variety of ways. Of course, you have the essentials— the macaroni noodles and the cheese— but as to the combinations and types of cheese, well, the possibilities are endless!
As a cheese lover, I can tell you that not all cheese is created equal. One of my favorite culinary pleasures is trying a new selection of cheeses. The flavor profiles can cover the spectrum from super mild to insanely sharp. And then there's the consistency, which can range from soft and crumbly to hard and even moldy (in the best way possible!) … making even the most basic dishes a new and wonderful experience. I love how cheese can be an adventure!
Recently I was introduced to Roth Cheese and their new Roth Ultimate Mac & Cheese blend made with Grand Cru (a Roth original cheese!), Havarti and Sharp Cheddar.

While Roth Ultimate Mac & Cheese can be used for more than just mac and cheese, I still wanted to try the blend in the classic dish with a little twist.
To take traditional mac and cheese up a notch, I made Ultimate Mac & Cheese Cups featuring Roth Ultimate Mac & Cheese.
