There’s not a Girl Scouts® cookie that I love more than Thin Mints®. When cookie season comes around I have to buy and stash multiple boxes to get my fix. The thing is, I can never have enough. In one sitting I can go through a single cookie sleeve… and if I have a glass of milk — watch out — because the box is as good as gone!
I have always wondered why the Girl Scouts didn’t just sell their amazing cookie year round, because I know I would buy them whenever my craving for Thin Mints hits. But until that day comes, there’s a NEW way to enjoy the wonderful flavors of Girl Scouts cookies with a bit of a twist: Pillsbury Girl Scouts Baking Mixes.
If you haven’t heard of or seen Pillsbury Girl Scouts Baking Mixes in stores— DON’T WORRY! They’re brand new! As soon as I read the release for these baking mixes I knew I had to try them. The mixes come in four varieties featuring Girl Scouts Thin Mints and Caramel & Coconut flavors.

The first two mixes I tried were Girl Scouts Thin Mints Brownie Mix and Girl Scouts Caramel & Coconut Blondie Mix.
As with all other Pillsbury mixes, the instructions were super simple. Depending on the mix, you just add water, an egg and butter or oil— then stir, spread in a pan and bake! That’s it! Within 30 minutes you have the delicious flavors of Girl Scouts cookies in a brownie or blondie. Y-U-M!
I knew I was going to love the Pillsbury Girl Scouts Thin Mints Brownie Mix because of my affinity for the cookie. Just as I anticipated, the brownie was delicious! The chocolate-mint flavors really came through, and though the texture is different than a cookie, the brownie version totally works. It also tastes AMAZING with a scoop of vanilla ice cream.
My next batch was made with Pillsbury Girl Scouts Caramel & Coconut Blondie Mix, which is inspired by the Girl Scouts’ Caramel deLites® / Samoas® cookies. These are actually my second favorite cookie 😉
The blondie batter was a bit thicker than the brownie which made these bars super soft and chewy. The had a ton of caramel-coconut flavor and were simply irresistible. I almost hate to admit that I enjoyed this version more than the cookie— my family finished the entire pan in no time!
I love that I can now have the taste of two of my favorite Girl Scouts cookies whenever I please. And as an added bonus, there are no artificial colors, preservatives or flavors included. The Pillsbury mixes are super simple to make and are a great value with a suggested retail price of $3.29. So far, 2 gold stars for the Pillsbury Girl Scouts Thin Mints Brownie and Girl Scouts Caramel & Coconut Blondie Mixes!
