A few weeks ago I shared the latest and greatest in home baking: Pillsbury Girl Scouts Baking Mixes!
I got my hands on all four of the varieties and whipped up my first batch of Thin Mints Brownies and Caramel & Coconut Blondies with incredible success. Both the brownies and blondies stayed true to the cookies’ signature flavors while being super easy to prepare. As tasty as the Pillsbury Girl Scouts Brownies and Blondies were, I was even more excited to try the cupcakes because I consider them to be my all-time favorite treat. I mean, who doesn’t love cupcakes … especially ones that taste like Girl Scouts Cookies!?
Once again, the cupcake versions of the Pillsbury Girl Scouts Baking Mixes were easy to make. On both the Girl Scouts® Thin Mints® Cupcake Mix and Girl Scouts® Caramel & Coconut Cupcake Mix the “icing†is a ganache. I hadn’t worked with this type of cupcake topping before and was curious to see how it would turn out. The cupcakes on the boxes of the baking mixes looked so perfect and I didn’t see how mine would ever come out that way (I’m a novice baker, after all!) … but they totally did!
I couldn’t quite get the action shot of the cooked cupcake being dipped in the ganache, but you simply use a “dip and twist” trick that makes every cupcake look like a masterpiece!
TIP: The directions state to fill each cupcake liner 1/2 full (this will yield 12 cupcakes per box)— Instead, fill them 3/4 full. This will give you a puffier cupcake which makes dipping in the ganache even easier. You’ll notice some chocolate got on the liners of my Girl Scouts® Caramel & Coconut Cupcakes… this could have been avoided if I filled them slightly more with batter prior to baking. In the end, it really doesn’t matter because all of the cupcakes were delicious!
I had a hard time deciding which Pillsbury Girl Scouts cupcake version I liked better because they were both so good. The Thin Mints cupcakes tasted like Thin Mints and the Caramel & Coconut Cupcakes tasted like Samoas. You really can’t go wrong with either, so it’s best to make both (like I did!) or choose your favorite cookie.
