Monsters University Cupcakes Made with Juicy Juice #MUJuice

MONSTERS UNIVERSITY opens in theaters today! To celebrate the new release -- which my family can't wait to see -- we made some delicious Monsters University "Juicy Juice" Cupcakes. I know what you're thinking -- Juicy Juice cupcakes!? But believe me, these little treats taste AMAZING!

Before I share the recipe, I have to tell you about our trip to Walmart to purchase all of the essentials for our Monsters-filled evening {You can view the full shop on my Google+ album}. When my family shopped at our local Walmart Supercenter, we couldn't believe all of the MU branded products that they had in stock -- seriously, we wanted to buy everything!

We ended up picking up two 64oz bottles of Juicy Juicy (on rollback for $2.68!) and a couple of packs of Mini 1" Monsters University toy figures to make and decorate the cupcakes with. A few of the other Monsters University items that we couldn't resist were Monsters University Band-Aid bandages, Monsters University "Berry Scary" Jell-O, and MU Kraft Macaroni & Cheese cups. The prices were really reasonable, ranging from $.66 for a packages of Jell-O to $39.88 for a giant Scare Factory playset from Imaginext.

When we got home, I immediately started to make the Monsters University cupcakes with Juicy Juice. Because we just wanted a little sweet treat, we made mini cupcakes instead of the full-sized versions, but you could do either with this recipe.

Monsters University Juicy Juice Cupcakes

What you'll need:

1 box of white cake mix

3 egg whites

1 1/4 cup Juicy Juice (any flavor, we used cherry)

1 tub white frosting

blue and green food coloring

optional (for decoration)

Monsters University mini toy figures

Candy eyes (available in the baking dept. at Walmart)

To make cupcakes:

1. Prepare the cake mix as directed on the box. Replace Juicy Juice with the water in the recipe. Fill mini cups and bake as directed.

2. Divide frosting into equal parts in separate bowls. Add blue and green food coloring until the mixture resembles Mike and Sulley.

3. After cupcakes have cooled, spread with colored frosting and top each cupcake with either a candy eye or a mini toy figure (be careful if you have small children as the characters are 1").

4. Enjoy!
