My husband is a HUGE Stove Top Stuffing fan, so when he found out Stove Top was sending me $50 to participate in the Stove Top Dinner Challenge, he was pretty excited. The challenge is simple. I have $50 to make 5 creative, cost-saving, and delicious one-dish meals. Each meal will be $10 or less.
For my 1st $10 Stove Top Dinner I made a Pork and Apple Bake using:
1 Maple Bourbon Pork Tenderloin (Hormel) - On sale for $4.99 - I used half in my dish
2 Gala Apples - $.50
1 Box Chicken Stove Top Stuffing - $1.49 - I like chicken, but the obvious choice would be to use pork
- Prepare the Stove Top as directed on the box, then spread a nice layer on the bottom of a casserole dish.
- Cut Pork Tenderloin into 1 inch thick slices. Place them on top of stuffing, making your second layer.
- Cut up 2 Gala apples, removing skin and seeds. Finally place apples on top of pork making your top layer.
Bake in oven at 400 degrees for 40-45 minutes.
Since my pork was already marinated and seasoned I did not have to add a sauce. I did think maybe a drizzling of honey and even some cinnamon would have worked well too. The pork, apples, and Stove Top are a perfect combination!
Total cost of this dish was $4.50 because I made half to feed a family of 3. For $9 (just doubling recipe) this meal would feed a family of 4 or more. Use the extra $1 on a cheap bag of veggies if you wish.
