Yummy Breakfast Idea: Blueberry Chia Overnight Oatmeal

Lately, I have been craving something different in the morning for breakfast. Something light and sweet, but still filling without being too sugary. I thought I might have to settle for the usual parfait until I discovered the wonderful world of overnight oatmeal. Have you heard of it? It’s amazing!

Overnight oatmeal is simply yogurt and oats mixed and left overnight in the fridge. In the morning, you have a delicious oatmeal that’s absorbed all the flavor of the yogurt you mixed in. And to make it even tastier, you can add additional mix-ins, like chia seeds, nuts, and fruit. There are endless flavor combinations!

My personal favorite overnight oatmeal “recipe” is Blueberry Chia. I use Yoplait original mountain blueberry yogurt (which now has 25% less sugar!), quick-cooking oats, chia seeds and frozen blueberries  — I mix everything together in a small bowl with a lid and refrigerate the night before I’m ready to eat. Sometimes I even add a few extra frozen blueberries on top, which explains why they look white in my photo 😉

I love having breakfast ready as soon as I wake up, which helps me stay on track when it comes to eating mindfully. Small changes are sweet!
