Shopping at the farmers market on Saturday reminded me to make one of my favorite healthy snacks-- Kale Chips. It wasn't until last year that I bought kale for the first time. To be honest, I didn't know what to do with the leafy vegetable and assumed it was just like collard greens. I kept on hearing more and more about this superfood and finally googled "how to cook kale". To my surprise, you can bake it in the oven and it turns into a crispy "chip". Since then, I have made kale chips about a dozen times. My whole family loves them, including my daughter. Once baked, you can sprinkle salt or any seasoning on top. It's a very easy and tasty way to get a serving of greens.
How to Make Kale Chips
You start with a bunch of kale- I use organic. Rinse off and dry completely. This is a very important step.
Then, tear the leaves off the stems. Discard stems.
Spread leaves on a baking sheet. You can spray with cooking spray or olive oil. I do not add seasoning until after the kale chips are cooked. I also tear the leaves up a little more to make smaller bites.
Bake in oven at 350 degrees for 15-20 minutes. After about 15 minutes I take a fork and shuffle the kale around. By this time you should hear a crunchy sound. The kale is done when it is completely crisp. You may have to make a few batches to get your desired taste. My husband like his kale chips well done and brown, while I like mine medium (aka not brown or burnt).
Once done, sprinkle with sea salt or other desired seasoning (Cajun works well). You'll be surprised how snack-like these kale chips taste!
