If there's a season for peaches, it's summer. That's about the only time of year that I crave the sweet and juicy fruit. You'd think that I'd make my own homemade peach filling with the abundance of fresh peaches in the summertime, but no— I still grab the canned version to make peach pie, and my new favorite peach dessert, Peaches and Cream Bars. I'm a sucker for quick and easy baking!
Now, if you do want to make your own homemade peach pie filling or compote, you can easily substitute it for canned in the recipe below...I'm sure it would be INCREDIBLE!
The thing I love most about these Peaches and Cream Bars is that it's a combo of pie and cake with a divine cream cheese center that kind of reminds me of cream cheese coffee cake...but with big slices of juicy peaches! I'm drooling over this dessert right now, it's that good!
Peaches and Cream Bars Recipe
Peaches and Cream Bars Ingredients:
- 1 box White Cake Mix
- 1 cup Butter, softened
- 2 Eggs
- 21 oz can Peach Pie Filling
- 8 oz Cream Cheese
- ½ cup Sugar
- 2 teaspoon Vanilla
How to Make Peaches and Cream Pie Bars:
1. Preheat oven to 350 degrees.
2. Grease a 9x9" pan and set aside.
3. Mix together cake mix, 1 egg, and butter until it forms a uniform crumbly mixture.
4. Set aside 1 cup of this mixture to use as a topping later.
5. Press the remaining crumb mixture into prepared pan.
6. Bake for 12 minutes.
7. Spread peaches on top of baked crust.
8. Cream together cream cheese, remaining egg, sugar, and vanilla until smooth.
9. Spread cream cheese mixture over peaches.
10. Sprinkle the cup of crumbs set aside earlier over the top.
11. Bake for 30-34 minutes or until edges of top begins to lightly brown.
12. Allow to cool, then refrigerate before serving.
