Caprese Stuffed Chicken

This Caprese Stuffed Chicken recipe has all the flavors of a delicious Caprese salad, baked in a chicken breast— It’s light on calories and delicious! This post was sponsored by Weight Watchers® International.

I indulged a little too much during the holidays— it was hard to resist all the cookies, cake and other decadent treats that come with the season. Which is why I’m making smarter for me choices now that the New Year is here.

One easy way I have been keeping my snacking in check is with Weight Watchers® cheese from Publix.

Since I’m constantly on the go, Weight Watchers String Cheese has been my go-to because it’s individually wrapped and portable (not to mention delicious!) with only 1-2 SmartPoints® per serving.

The Light String Cheese has only 50 calories per serving with 6g of protein—you really can’t beat that for a quick and easy snack!

I enjoy Weight Watchers String Cheese so much that I thought I would incorporate it into mealtime.

Portion sizes are what really keep me on track during the holidays and beyond, and using just a single Weight Watchers String Cheese instead of regular mozzarella in each portion of my favorite meals would really save some calories.

I tested this theory on one of the best combos of food ever: Caprese Stuffed Chicken.

Chicken Caprese

This Caprese Chicken recipe has all the flavors of a delicious Caprese salad, baked in a chicken breast.

By using Weight Watchers Light String Cheese, I’m making a smart choice that I can feel good about! It’s all about balance and I love that Weight Watchers has the best possible combination of great taste and smart products.

Here’s the yummy recipe:

Caprese Stuffed Chicken Recipe

Caprese Chicken Ingredients:

(2 servings)

  • 2 Chicken breasts
  • 2 String Cheese
  • 4 Basil leaves
  • 2 Small Roma tomatoes, sliced
  • Salt
  • Pepper
  • Olive oil
  • Balsamic vinegar

How to Make Caprese Chicken

1. Preheat oven to 400 degrees.

2. With a sharp knife, cut a slit into each chicken breast to form a pocket.

3. Stuff each chicken breast with string cheese, sliced tomato and basil leaves. Sprinkle with salt and pepper to taste. Secure with toothpicks.

4. Place in a baking dish and drizzle with olive oil. Sprinkle with additional salt and pepper if desired.

5. Bake in preheated oven for 35-40 minutes, until the chicken is fully cooked (this will depend on the thickness of chicken breasts).

6. Brush with balsamic vinegar before serving.

Caprese Stuffed Chicken Recipe

The Caprese Stuffed Chicken was so flavorful that I didn’t miss the mound of high-fat mozzarella that I usually put in the chicken. In fact, one Weight Watchers Light String Cheese stick turned out to be the perfect portion size with the added tomatoes and basil.

I think my husband was the most surprised when I told him I used a Weight Watchers Light String Cheese stick instead of sliced mozzarella. The Weight Watchers Light String Cheese melted just like whole milk mozzarella and tasted fantastic, too. You would never know this dish was lighter on calories with all the delicious flavors!

Now, I want to use Weight Watchers cheese in even more of my favorite recipes. By constantly making smarter choices, I feel less guilty when I do indulge!
