One of the best things about making Grinch Bark is the fact that it's got a little pop of peppermint. Yeah, you heard that right.
How many chocolate bark recipes have peppermint in them?! I decided it was an absolute must for this wickedly fun treat.
Plus, the kids just love eating green things for some reason, which I don't understand at all. But if it makes them happy, we're doing green! LOL!

Grinch Bark
- If this is the first time you're trying to make chocolate bark, you may be wondering why I didn't use chocolate chips and food coloring. Basically, it's because it's harder to use. The chocolate can seize up a lot easier and adding food coloring turns out to be a mess. So, I prefer to use melting candies that are already the color I need. It's worth it to avoid the aggravation.
- Be gentle when you're adding the sprinkles and whatnot to the chocolate. If they drop on top but aren't deep enough into the chocolate for you, pat them down into it gently. If you're not careful about this, you'll end up with no extras on top of the bark, which is far less fun presentation.
What You Need to Make Grinch Bark
- 2 cups bright green candy melts
- ¼ cup red candy melts
- 1 tablespoon coconut oil
- ¼ cup crushed peppermints
- ¼ cup Grinch-ish sprinkles
How to Make Grinch Bark
- Line your baking dish (9x9 or 9x13 inches) with parchment paper and lightly coat with cooking spray, if desired.
- Place bright green candy melts and ¾ tablespoon coconut oil in a microwave-safe bowl. Microwave in 30-second increments, stirring between each increment until melted and smooth.
- Pour green melted candy into the prepared baking dish and spread it out evenly.
- Place the red candy melts and remaining coconut oil in a second microwave-safe bowl. Microwave in 30-second increments, stirring between each increment until melted and smooth.
- Drizzle over the green melted candy.
- Lightly run a knife or spatula through it to swirl the two together.
- Sprinkle the peppermints and sprinkles over the melted candy, then place in the fridge for about an hour.
- Remove from the fridge then remove parchment paper from the pan, dropping the parchment paper onto the counter a couple of times to break the bark up. Then serve and enjoy!
