I'm not a huge breakfast person, but what I do love is a good smoothie in the morning. It's so much easier to drink my first meal of the day because mornings are rather hectic around here.
It should go without saying that I'm taking a healthy(ier) approach to the New Year and that includes putting extra nutritious foods into my body. A great way to pack protein, vitamins, and minerals into breakfast is to blend up a non-dairy fruit smoothie. My go-to right now is this recipe for a Blueberry Smoothie with Banana and Almond Butter...can you say YUM!?
This blueberry smoothie is so good that it could easily qualify as a dessert. The mix contains frozen blueberries, bananas, almond milk, almond butter, ground flaxseed, and a pinch of cinnamon.
What Goes in a Blueberry Smoothie
- ½ cup frozen blueberries
- 1 ½ cups frozen banana chunks
- 1 cup unsweetened almond milk (or milk of choice)
- 1 Tablespoon almond butter
- 1 Tablespoon ground flaxseed
- ¼ teaspoon ground cinnamon
How Do you Make a Healthy Blueberry Smoothie
1. Place all ingredients in a blender and blend on high until incorporated. Add a handful of ice for a thicker smoothie or extra almond milk to thin the smoothie out depending on desired consistency.
