Plus, I am always looking for easy breakfast ideas that can be made in larger batches so all I have to do in the morning is reheat them. Breakfast muffins, both sweet and savory, have always been a favorite, and this recipe is no exception.
If you want something sweet instead, you'll love these pumpkin cream cheese swirl muffins. They are an excellent choice that is sweet, moist, and always a family favorite option.
What Makes These Turn Green?
While you may have seen green eggs turned green with food coloring, in this recipe it's all because of the blended baby spinach. If you want something healthier and avoid chemicals and dyes as many do, then this version is great. Spinach is an excellent choice for adding color and nutrients while having a mild flavor.
When mixed in with the salty ham and cheese, even picky kids won't notice any spinach or "green" flavor in the muffins. Instead, they will just be excited to eat something like one of their favorite picture books.
Can I Make These Ahead and Freeze Them?
You absolutely can make these ahead of time and freeze them! When making egg breakfast muffins like this, I like to make double or triple batches. Just let them cool completely before freezing so no condensation forms and causes freezer burn.
They are good in the refrigerator for 4-5 days, and in the freezer for up to 3 months. I like to wrap them individually in plastic wrap then drop them into a freezer storage container or freezer storage bag. This double packaging method keeps them fresh longer, and I have found makes reheating easier when you only need one or two at a time.

How to Make Green Eggs and Ham Breakfast Muffins
Preheat the oven to 350°F and spray a muffin tin with non-stick spray. You may also use cupcake liners if preferred.
Into a blender or food processor, add the eggs, milk, spinach, salt, and black pepper and pulse until blended and incorporated well.
Pour the mixture into the prepared muffin tins dividing among the 12 cavities.
Top each "muffin" with a bit of ham.
Then mozzarella cheese.
Bake for 22-25 minutes until set and lightly browned on top.
Allow them to cool in the pan for 5 minutes before removing to serve.
Serve with salsa or hot sauce for dipping.
