Artichoke Salad - Love Greek salad? Then you're going to GO CRAZY for this mouth-watering salad recipe that's loaded with artichoke hearts, feta cheese, kalamata olives and more!
Artichoke Salad
I don't think there's a salad that I love more than Greek or Mediterranean salad, especially when there are tons of artichokes, feta cheese and Kalamata olives! It's one of the most divine combinations of flavors that I can think of, and so perfect for summer (or any time of year, really!).
My Artichoke Salad is highlighted by a simple olive oil vinaigrette and packed with marinated artichoke hearts along with most of the other yummies from a traditional Greek salad (no cucumbers here though — but feel free to add some if you like!). It's Mediterranean salad at its best!
Artichoke Salad Recipe
Greek Artichoke Salad Ingredients:
- 14 oz quartered marinated artichoke hearts, drained
- 4 oz crumbled feta cheese
- 4 oz Kalamata olives
- ½ red pepper, chopped
- ½ green pepper, chopped
- ½ pint grape tomatoes
- ½ red onion, chopped
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1 tablespoon lemon juice
- 4 oz spring mix
How to Make Mediterranean Salad:
1. In a small bowl, whisk together olive oil, vinegar, oregano, and lemon juice.
2. In a large bowl, combine artichokes, feta cheese, Kalamata olives, red & green pepper, tomatoes, and onion.
3. Pour vinaigrette on top of the marinated salad mix. Toss gently to combine. Refrigerate until ready to serve.
4. Serve artichoke salad on a bed of fresh spring mix. Enjoy!

I love how easy this Greek artichoke salad is to make— I often prepare this recipe when I want a quick and healthy lunch. It can also be made into a meal for dinner with the addition of grilled chicken, shrimp, tuna or gyro meat. I've yet to bring this recipe to a potluck or as a side dish for a family picnic or special occasion, but I can guarantee it would be a hit!

If you live in a city with a Fresh Market, they have it pre-made. To DIE for! Have a 'two-pounder' in the fridge right now. Was looking for the sodium content...can't believe it has NO salt! (But, the olives are loaded!) Hope you enjoyed if you already made it! Check out FM, though, if you have it!
