What chocolate is best to use for hot cocoa bombs?
Because they’re super convenient, I use candy melts. You can use chocolate, dark chocolate or vanilla - they all melt the same! If using a bar of high-quality chocolate to make cocoa bombs, you should chop it up into small pieces in order for the melting process not to be uneven when heating by any other means. Candy melts are already all one size and have an even melting quality as well.
You can melt your chocolate in the microwave in 15-second increments, or use the double boiler method. Either way, you want to keep your chocolate from scorching. I’ve found that around 90 degrees Fahrenheit works well.
Using silicone molds
After you melt the chocolate of your choice, pour it into your mold and pop it into the freezer. You’ll notice the shell hardens in under 10 minutes, which is why hot cocoa bombs make amazing last minute gift ideas! Honestly, though the silicone molds are the key. They'll make the outside smooth and shiny - and peel off the chocolate easy.
Filling your cocoa bombs
Aside from hot cocoa mix, you can add tons of other mini ingredients inside your cocoa bombs! Choose the fillings you want to go inside (mini marshmallows, peppermint pieces, the list goes on), then fill one side. A little overflow is okay because the top will cover it.
To attach the two halves of chocolate together, you’ll use a paint brush or other small tool (or even your finger) and spread melted chocolate as an “adhesive”. As they set, the chocolate will harden and the pieces will be attached.
Cracking open the cocoa bombs
Pour steamed milk over your hot cocoa bomb to get the best crack. Some say just dropping it in doesn't work as well, because if you don’t heat up enough water first, then all that happens is when they hit the liquid below them everything melts and sticks together instead of cracking open with a huge satisfying "pop." Pouring steamed on top seems to be what yields the prettiest result while also getting an amazing show!
