When it comes to cooking, you really can't get any better than fresh ingredients. One of the ways I save money on my family's grocery bill is by buying produce and other commodities when they're in season. Right now in Florida, we have an abundance of tomatoes and bell peppers—two of my favorites for home cooking.
Ground beef stuffed bell peppers are a comfort food staple in my home because of how easy they are to prepare (I opt out of using rice to cut back on the carbs and cooking time!). While looking at the Fresh from Florida recipe page, I came across a recipe for Taco Stuffed Bell Peppers using fresh Florida-grown bell peppers and tomatoes. The simple twist on traditional stuffed peppers really stood out to me because, hello... TACOS! So of course, I had to make the Mexican-inspired dish for my family.
The verdict? We all fell in love! Taco Stuffed Bell Peppers are legit... and the fact that this recipe uses Fresh from Florida produce is just icing on the cake. If you live in the Sunshine state, head to your local Publix for a great selection of in-season Fresh from Florida produce.
Taco Stuffed Bell Peppers Recipe
Ingredients for Taco Stuffed Bell Peppers:
- 3 large Florida bell peppers (your favorite color), halved lengthwise, seeds removed
- 1 pound lean ground beef
- 1 package taco meat seasoning for 1 pound of ground beef
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 2 Florida tomatoes, diced
- 12 ounces Colby jack cheese, shredded
- 1 cup tortilla chips, crushed (optional_
- 1 teaspoon olive oil
- sea salt and fresh ground pepper, to taste
- salsa and sour cream for garnish
How to Make Taco Stuffed Bell Peppers:
1. Preheat a large sauté pan over medium-high heat.
2. Preheat oven to 375 degrees.
3. Add olive oil to preheated sauté pan.
4. Add chopped onion to pan and cook until translucent.
5. Add garlic and ground beef to the cooking onions.
6. Brown ground beef and drain any excess fat.
7. Add the taco seasoning mix and diced tomatoes; stir ingredients to combine.
8. Remove from heat and let cool slightly.
9. Add about 4 ounces of the cheese to the beef mixture and stir to combine.
10. Evenly stuff each pepper half with the beef mixture.
11. Top each stuffed pepper with the rest of the cheese.
12. Place stuffed peppers on a cookie sheet and bake in preheated oven for 15 to 20 minutes.
13. Remove stuffed peppers from oven and evenly top them with the crushed tortilla chips.
14. Place the peppers back in the oven for another 5 minutes or until tortilla chip topping is golden brown and filling mixture and cheese are bubbly.
15. Remove stuffed peppers from oven and let cool slightly.
16. Serve warm with salsa and sour cream.
