I think one of my all-time favorite sandwiches is a BLT. There’s just something so delicious about the simple combination of crispy bacon, fresh lettuce, and juicy tomato piled on toasted bread with mayo.
My love for this sandwich had me thinking why I’m not enjoying it more often...and why not for breakfast? This was when I came up with the brilliant idea to put a fried egg, sunny-side up, on the top layer of the club-style sandwich for a mouthwatering Breakfast BLT!

I don’t have a gluten sensitivity, but I have found that when I eat bread, my body responds better to gluten-free. This was how I discovered and their delicious line of gluten-free bread.

Breakfast BLT Sandwich Recipe
Ingredients:
- 3 slices Udi’s Delicious Soft White Sandwich Bread
- 2 slices bacon, cooked
- 2 slices tomato
- 2 lettuce leaves
- 1 egg, fried over easy (or to desired temperature)
- Optional: avocado, cream cheese or mayo
How to make a Breakfast BLT Sandwich:
1. Lightly toast Udi’s Delicious White Bread
2. If optional avocado, cream cheese or mayo is used, spread on one side of two slices of toasted Udi’s Delicious White Bread.
3. Layer one lettuce leaf, one tomato slice and two slices of bacon on one slice of toasted bread. Top with the second slice of bread. Repeat stacking of lettuce tomato and bacon.
4. Top with a fried egg and the third slice of bread. Secure with toothpicks before slicing.
When I made the Breakfast BLT for the first time, I opted out of using mayo, cream cheese or mashed avocado on the toasted bread. This worked perfectly well because I like my egg a little runny, and when I cut into the bread, the egg acted as a spread.
If you must have a spread on your Breakfast BLT, cream cheese or mayonnaise would still make this sandwich delicious. I actually think mashed avocado would elevate this recipe to an even more decadent level, and will be adding it the next time I make it.
One thing that made me fall in love with this sandwich was the first bite. All the ingredients are balanced, flavorful and fresh. When you toast Udi’s Delicious White Bread, it has the perfect weight and crunch needed to stand up to a club-style BLT (when I say club-style, I mean that it has two layers versus a typical single layer sandwich).
I always pass my recipes by my husband, and when he took the first bite of this Breakfast BLT his face lit up— this tells me a lot because he had no idea I was using gluten-free bread from Udi’s!
