Puff Pastry Pizza Snack
Stop spending so much on frozen pizza or Hot Pockets. Make your own homemade puff pastry pizza snacks instead! These are super easy to make, always a hit with kids, and delicious. Puff pastry makes a great flaky crust idea that is ideal for these little easy snacks. They crisp perfectly, are easy to handle, and hold tons of delicious fillings that are sure to please.
What Fillings Can I Add to This Pizza?
What toppings do you like on your pizza? That's what you can add to these pizza pockets. While it's best to stick with less liquid in these, you can add pretty much anything you would normally put on top of a pizza. Below are some of our favorite toppings.
- Ham, Canadian bacon, bacon, sausage, hamburger, or chicken
- Bell pepper, onion, mushrooms, olives, tomatoes, jalapenos, spinach, or kale
- Cheddar, gouda, fontina, feta, or pepper jack
Can I Make These Ahead of Time and Freeze?
You can definitely make these ahead of time and freeze for later. I like using this recipe to create a batch of snacks for later. When making in advance, you can bake them and freeze after they cool, or you can freeze them once filled and before baking.
If freezing before baked, you can flash freeze them until solid, then stack in a freezer storage bag or container. I recommend you freeze with a piece of waxed paper between each pastry to make it easier to grab just one at a time to cook and enjoy later.

In a medium bowl, combine one egg, flour, oregano, Italian seasoning, salt, black pepper, mozzarella, and Parmesan until incorporated and set aside.
Lightly flour a clean work space.
Place 1 sheet of puff pastry onto the clean surface, and roll out to an even thickness.
Cut the puff pastry into 6 squares.
Place a spoon of the cheese mixture onto the center of one corner of the puff pastry square. Make sure to leave enough space around the edges to crimp it closed.

Finally, add a small spoon of pizza sauce.
Repeat on all 6 squares of pastry.
In a small bowl, whisk the remaining egg and 1 tablespoon of water to create an egg wash.
Brush the egg wash around the edges of the puff pastry.
Fold over the dough and crimp the edges sealed with a fork.
Brush the top of each triangle with egg wash and chill for 10-15 minutes.
