I don't think there's anything better than a good pizza. The only problem is that you can sometimes feel yucky and bloated after overindulging. I know, I've been there!
The solution for me is low carb Mediterranean Pizza made with a cauliflower rice pizza crust.
It's got ALL the best ingredients inspired by the Mediterranean, including my favorite olives and feta cheese!
The combo of veggies on this pizza is near perfection as it tastes as fresh as it looks. And because the crust is made of cauliflower, you get extra vitamins and nutrients without the guilt.
Mediterranean Pizza Recipe
Ingredients:
- Cauliflower Pizza Crust (or crust of choice, can be pre-made or homemade)
Pizza Sauce:
- 3 tablespoons tomato paste
- 1 tablespoon water
Pizza Toppings:
- Bell pepper, sliced
- Tomato, sliced
- Black olives, sliced
- Red onion, sliced
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese crumbled
- Fresh parsley, chopped
How to Make Mediterranean Pizza
1. Start by making this cauliflower pizza crust recipe or pre-made/homemade crust of choice.
2. Place tomato paste and water in a small bowl and stir to combine. Spread evenly onto crust.
3. Sprinkle cheeses evenly on pizza followed by toppings (except for parsley). Place pizza back in the oven just until cheese has melted.
4. Remove from oven and sprinkle with freshly chopped parsley. Slice and serve warm.

Is Mediterranean Pizza Healthy?
Yes-- Especially when you make it with a low carb cauliflower or veggie crust! There is no meat in this pizza so it's a great choice if you're vegetarian, cutting back on meat or just looking to add extra vegetables to your diet.
To keep this veggie pizza low in fat, keep the cheese to a minimum (I know, it's hard!) and add extra vegetables, even ones that aren't on the ingredient list.
