Lately, I've been trying to make my favorite desserts a little bit healthier. I have a sweet tooth, so getting rid of treats all together is not an option, but I can modify to make them "better for me."
Yesterday I posted these decadent Chocolate Pumpkin Muffins that are both gluten-free and grain-free, and previously I posted these double chocolate black bean brownies (You have to trust me that this recipe today works!).
Today I have healthy chocolate truffles that will basically blow your mind with their yumminess. The best part of all is that this is a NO BAKE DESSERT recipe with only four ingredients— it's really hard to mess these fudge truffles up! Plus, they look amazing after being dusted in cocoa powder, and no one will know they were made at home!
Each batch of this easy chocolate truffles recipe makes 12 chocolate truffles. If you plan on sharing, make sure to double or triple the recipe because once you try one, you'll want them all for yourself! If you're really good at portion control, freeze leftover fudge truffles and let them sit on the counter for a few minutes until they are ready to eat.
Easy Chocolate Truffles Recipe
Chocolate Truffles Ingredients:
- ½ cup semi-sweet chocolate chips
- 1 tablespoon almond butter (may substitute with your favorite nut butter)
- ¼ cup plain Greek yogurt
- ¼ cup unsweetened cocoa powder
How to make Chocolate Truffles:
1. Place chocolate chips in a small bowl, and microwave for 1 minute, stir and continue to microwave in 15-20 second intervals (stirring in between) until melted.
2. Stir in almond butter until combined.
3. Add Greek yogurt and mix until incorporated.
4. Cover and chill in the refrigerator for 2 hours to firm up.
5. Use a tablespoon to scoop the chocolate mixture into clean hands and roll into balls.
6. Roll the balls in the unsweetened cocoa powder to complete the truffles.
7. Store in the refrigerator until ready to be enjoyed.
