I had a really hard time naming this recipe for Healthy Pumpkin Chocolate Chip Muffins because there are so many elements that make them unique. First, these chocolate muffins are gluten-free, grain-free and dairy-free. I'm calling them muffins because they're baked in a muffin tin with cupcake liners, but they are more like brownies in texture.
If you prefer, you could put the mixture in a brownie pan or cute little bundt cake molds — but I really love the individual-sized portions you get when you make them into muffins (and the liners really help for serving).
These Chocolate Pumpkin Muffins are made with avocado, which is a healthy and delicious fat source that tastes incredible in baked goods. You have to trust me on this one if you haven't used avocado in your desserts! And, with the addition of chocolate chips, you could also call these Pumpkin Chocolate Chip Muffins.
I guess the moral of this intro is that it doesn't matter what you call this chocolate pumpkin muffin recipe, the end result will be ridiculously delicious!
Chocolate Pumpkin Muffins Recipe
Ingredients:
- ½ cup pumpkin puree
- 1 avocado
- 2 eggs
- ¼ cup honey
- 2 tablespoons butter, melted (or coconut oil, melted)
- 3 tablespoons coconut flour
- ⅓ cup cocoa powder
- 1 ½ teaspoons baking soda
- ¼ teaspoon salt
- ¼ cup Enjoy Life dark chocolate chips + extra for sprinkling on top
- Cooking spray
How to Make Chocolate Pumpkin Muffins
1. Preheat oven to 350 degrees F. Add baking cups to muffin tin and spray with a light coat of cooking spray. Set aside.
2. Add all ingredients (except chocolate chips) to a blender. Blend the ingredients on high until smooth.
3. Add chocolate chips to the mixture and gently stir to incorporate.
4. Fill each baking cup to the top with the mixture. Sprinkle the tops with a few chocolate chips.
5. Bake in preheated oven for 21-24 minutes or until a toothpick inserted in center comes out clean.
6. Allow muffins to cool in muffin tin for 5 minutes before serving.
