Cauliflower Pizza Crust
When cauliflower rice became a popular substitute for regular rice, my family jumped right on the bandwagon. The simple swap doesn't taste that much different and it's so much healthier— you can't deny grain-free and extra veggies!
When cauliflower pizza crust became a thing, we quickly made the switch, too.
However, the one thing we noticed in most store-bought cauliflower pizza crusts was that the ingredient list contained a blend of cauliflower, corn flour, cornstarch, and potato starch...not exactly a low carb substitute for pizza crust!
As always, I knew that we could make our own cauliflower pizza crust at home with a fraction of the ingredients (and price!). This recipe for cauliflower pizza crust takes a little more time, but the results are totally worth it.
It's awesome knowing exactly what is in our pizza crust and it allows us to follow a healthier lifestyle while still being able to enjoy one of our favorite foods. The great thing about this cauliflower pizza crust recipe is that it's a base for a million different pizza combinations.
Cauliflower Pizza Crust Recipe
Cauliflower Pizza Crust Ingredients:
- 2 cups cooked cauliflower rice
- 1 cup shredded mozzarella cheese
- 1 cup grated parmesan cheese
- 2 eggs
- ½ teaspoon dried basil
- ½ teaspoon dried parsley
- ½ teaspoon minced garlic
How to Make Cauliflower Pizza Crust:
1. Preheat the oven to 450 degrees F. Generously spray a 12” pizza pan with cooking spray and set aside.
2. To make cauliflower rice, place chopped cauliflower florets (at least ½ of a large head of cauliflower) in a food processor and pulse just until it reaches a rice-like consistency. Scoop out two cups full and place in a microwave-safe bowl. Microwave for 5 minutes and then allow it to cool on the counter for 3-4 minutes.
3. Don’t skip steps 3-4 - these steps are key to the cauliflower crust holding together! Transfer the cooled cauliflower to a fine mesh strainer and press to release any excess water.
4. Place a clean and thin dish towel over your microwave safe bowl and transfer the cauliflower rice to the center of the towel. Wrap the sides of the towel around the cauliflower and squeeze until you have gotten as much moisture out of the cauliflower as you can. You can also use a nut milk bag to squeeze out the excess moisture in cauliflower rice.
Tip: When you think that you have all of the moisture out of the cauliflower rice, squeeze some more! It's essential that the riced cauliflower is as dry as possible.
5. Place the drained cauliflower back in the bowl and add the remaining dough ingredients. Stir to combine.
6. Transfer the pizza dough to the prepared pizza pan and press to flatten into an even crust - being sure not to make the crust too thin.
7. Bake for 15 minutes.
Once you have your pre-baked cauliflower pizza crust, you can add pizza sauce, extra cheese, and desired toppings— just pop it back in the oven until all the cheese is melted. Our favorite cauliflower pizza is Mediterranean Pizza, with feta cheese, black olives, red onion, tomatoes, and bell peppers... SO DELISH!

Is Cauliflower Pizza Crust Healthy?
It should come as no surprise that cauliflower pizza crust is healthy when compared to traditional pizza dough made of white flour. Though it's important to remember that while cauliflower pizza crust is low carb, it does contain cheese which is higher in fat and calories. It's true what they say, everything in moderation!
Can I Use Frozen Cauliflower Rice?
Technically, yes— but I have tried this recipe with store-bought frozen cauliflower rice and there is a difference in the consistency. If you're going to go the store-bought route, buy fresh riced cauliflower versus frozen.
If you have to use frozen cauliflower rice, prepare as the directions state and make sure to strain as much moisture as possible out of the cauliflower. I can't stress enough how important it is to have dry cauliflower rice — this is the secret to the best cauliflower pizza crust!
