Tis the season for pumpkin spice...AMIRIGHT!? I know that as soon as fall hits I get on a pumpkin spice kick that lasts through Thanksgiving. Luckily my local coffee shops have me covered for that much-needed caffeine fix in the A.M. But as a true PSL lover, I want more!
That's why I'm super excited to share this AWESOME recipe for Pumpkin Spice Latte Cupcakes! It has all the great flavors of a pumpkin spice latte in a sweet and delicious cupcake. This baby is super hard to resist — especially when you decorate with homemade cream cheese frosting and a paper straw! Here's the delicious recipe:
Pumpkin Spice Latte Cupcakes Recipe
Cupcake Ingredients:
- 1 box of Pumpkin Cake Mix
- 3 eggs
- ½ cup unsalted sweet cream butter, softened
- ½ cup whole milk
- ½ cup sour cream
- ¼ cup strong coffee
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
Cream Cheese Frosting Ingredients:
- 8 oz. cream cheese
- ½ cup butter, room temperature
- 4-5 cups powdered sugar
- 2 tsp. vanilla extract
- Paper straws cut in half and pumpkin pie spice for decoration
Instructions:
- Preheat oven to 350 degrees and line pans with cupcake liners.
- Combine cake mix, butter, eggs, milk, cinnamon, vanilla and sour cream in a large standing mixing bowl and mix until smooth.
- Stir in coffee (make it as strong as you want your "latte" cupcakes to be).
- Fill cupcake liners ¾ full and bake for 16-20 minutes or until an inserted knife comes out clean. Let cool.
Frosting:
- Beat cream cheese and butter for 2 minutes. Add vanilla extract and slowly add in powdered sugar until thickened.
- Pipe frosting onto cupcakes and sprinkle with pumpkin pie spice. Top with a straw.
