Gluten Free Pumpkin Muffins
These gluten free pumpkin spice muffins are super delicious in the morning with a cup of coffee! They have the perfect amount of pumpkin spice, cinnamon, and sugar...all of the delicious flavors of fall!
Plus, these Gluten Free Pumpkin Muffins freeze really well— so you can have a gluten-free pumpkin treat whenever you please. Simply freeze the pumpkin muffins BEFORE adding the sugar and cinnamon coating. When you're ready to eat, remove the desired amount of pumpkin spice muffins from the freezer, pop in the microwave for 1 minute and then follow step 7 in the recipe below.
GF Pumpkin Muffin Recipe
Pumpkin Muffins Ingredients:
- 1 ½ cups gluten-free flour
- ¾ cup pumpkin puree
- ½ cup milk
- ½ cup butter, melted
- ½ cup sugar
- 2 teaspoon pumpkin pie spice
- 2 teaspoons baking powder
- 1 teaspoon xanthan gum (if your flour mix doesn’t already include it)
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 1 egg
For Cinnamon Sugar Coating:
- ¼ cup butter, melted
- ½ cup sugar
- 1 teaspoon cinnamon
How to Make Gluten Free Pumpkin Muffins
1. Preheat oven to 350 degrees F. Lightly spray a muffin pan with cooking spray and set aside.
2. Place all ingredients for muffins (excluding coating ingredients) in one large bowl. Mix well to combine.
3. Spoon batter into prepared muffin pan and fill each cup to approximately ⅔ full.
4. Bake for 16-19 minutes.
5. While muffins are baking, melt ¼ cup of butter in a shallow bowl for the coating.
6. Combine the cinnamon and sugar in a separate small bowl.
7. Once muffins have completed the baking process, submerge the top of the muffin into the melted butter. Immediately dip the top into the cinnamon sugar mixture and then roll the entire muffin in the mix to give the remaining surface area a light coating.
8. Continue this process until all muffins are coated and serve.

Is Pumpkin Spice Gluten Free?
YES! All single ingredient spices are gluten-free. As long as your pumpkin spice mix contains cinnamon, ground ginger, nutmeg, ground allspice and ground cloves (or a similar combination of spices) without added ingredients it's 100% gluten-free.
