Pumpkin Spice Granola
I'm convinced that the best part of the fall season is pumpkin spice. The reason is that it's the only time of the year that I enjoy beverages or treats, including pumpkin spice donuts and pumpkin muffins, made with the incredible combination of ground cinnamon, ginger, nutmeg, allspice, and cloves— the classic pumpkin pie spice mixture.
If you're a pumpkin spice fan, like me, then you already know how addicting it can be. What starts in the morning as a latte, creeps into breakfast and dessert on the regular. The best part is that by the time I'm over pumpkin spice, it's time for the holidays, and a new indulgence (like white chocolate and peppermint!).
Needless to say, that when autumn is here, I get as much pumpkin spice yumminess into my day as I can handle.
This healthy pumpkin spice granola is a favorite because it's packed with pumpkin, pecans, maple syrup, pumpkin seeds, and pumpkin pie spice. A fall lover's dream granola recipe! Oh, and it's gluten free, too!
Pumpkin Spice Granola Recipe
Pumpkin Spice Granola Ingredients:
- 4 cups gluten free old-fashioned oats
- 1 cup roasted pumpkin seeds
- ½ cup pecans, chopped small
- ½ cup maple syrup
- 6 tablespoons butter, melted
- 4 tablespoons pumpkin puree
- 2 teaspoons pumpkin pie spice
- Pinch of salt
How to Make Pumpkin Spice Granola:
1. Preheat oven to 275 degrees F. Line two baking sheets with parchment paper and set aside.
2. In a large bowl, add all ingredients and stir until fully incorporated.
3. Divide the mixture between two baking sheets and bake for 20 minutes. Remove from oven, stir well, and place baking sheets back in the oven for another 20 minutes.
4. Allow the granola to cool completely on the baking sheets before transferring to an airtight container.
How to Enjoy Pumpkin Spice Granola
This homemade pumpkin spice granola will keep for up to two weeks in a sealed container and is best enjoyed at breakfast with milk of choice, as a mix-in for yogurt, or as a topping for ice cream. It's also perfectly delicious on its own.
You can substitute the pecans with another nut if you prefer, including walnuts and pistachios. I think coconut chips would also be super tasty in this homemade pumpkin granola recipe.
