These Apple Cinnamon Oatmeal Cookies scream FALL with the delicious combination of fresh apples, oatmeal, and spiced cinnamon.

With Fall right around the corner, apple recipes will be in full force soon — which, of course, is never a bad thing! I love everything about fall and these made-from-scratch Cinnamon Apple Oatmeal Cookies are the icing on the cake!

Apple Cinnamon Oatmeal Cookies

It took me awhile to find the perfect apple cinnamon oatmeal cookies recipe... and now that I found it, I just can't stop baking them. It's not even officially fall yet and I've already made two batches!

These scrumptious cookies are like breakfast and dessert rolled into one! Since these cookies are homemade, I don't feel too guilty about having one or two for breakfast with my morning coffee. They're even a great as an after-school snack for the kids, and obviously make a fantastic dessert, too! I could totally see a scoop of vanilla ice cream piled high on top of a warm cookie fresh out of the oven. Mmmmm ... who doesn't love cinnamon apple oatmeal cookies for fall!?

Apple Oatmeal Cookies Recipe

Ingredients:

  • 1 cup apples, diced and peeled
  • 1 cup flour
  • 2 cups uncooked oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoon butter, softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 3 tablespoon applesauce
  • 2 teaspoon vanilla

How to Make Apple Cinnamon Oatmeal Cookies

1. Preheat oven to 350 degrees.

2. Line baking sheets with parchment paper or a silicone mat.

3. Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

4. Stir oats into the flour mixture and set aside.

5. Cream together butter, brown sugar, and sugar.

6. Add in egg, applesauce, and vanilla and beat until blended.

7. Gradually add in the flour mixture, stirring by hand, until incorporated.

8. Fold in the diced apples.

9. Spoon into 1 tablespoon balls and place on prepared baking sheets 2" apart.

10. Bake for 18-20 minutes or until the edges are lightly browned.

    These were very dry and did not expand, they stayed in ball form 🙁
