Mini Muffin Tin Apple Pie Bites Recipe

This Mini Muffin Tin Apple Pie Bites recipe screams fall yumminess with the sweet taste of apples, cinnamon, and vanilla in a bite-size dessert.

I don't know why I associate apples with fall when they're readily available all year, but as soon as autumn hits, I get a craving for all things apple dessert! Apple pie is the clear go-to, but making an entire pie can be really time-consuming when I really want only a couple of bites. Enter Mini Muffin Tin Apple Pie Bites.

 Mini Muffin Tin Apple Pie Bites recipe 

These mini apple pies are easily made in a mini muffin tin with a few simple ingredients — though you could make them in a full-sized muffin tin if you wanted larger apple pies!

Because of their small size, you don't have to feel guilty about indulging in the apple-goodness. For the ultimate sweet treat, serve a la mode style with a petite scoop of vanilla ice and a sprinkle of cinnamon!

Mini Muffin Tin Apple Pie Bites Recipe

Ingredients:

  •  1 refrigerated pie crust
  • 2 large apples, peeled, cored and chopped
  • 2 tablespoons sugar
  • 1 tablespoon flour
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla

Directions:

1. Preheat oven to 350 degrees.

2. In a mixing bowl, combine the chopped apples, flour, sugar, cinnamon, and vanilla.

3. Roll your dough out and use a small cookie cutter (or even the top of a jar!) to create small circles.

4. Spray a mini muffin tin with cooking spray and place the dough circles in so they fill the tin.

5. Scoop the batter into each mini pie crust.

6. Bake for 30 minutes. Let cool. Serve topped with ice cream and cinnamon!
